Grain-Free CousCous (Tabouli)

Ingredients: 1 head cauliflower, chopped 4 cups finely chopped tomatoes (remove seeds first) 1 cup finely chopped cucumber (remove seeds first) 3 cups finely chopped flat leaf parsley (about 3 bunches) 1/4 cup finely chopped fresh mint 1 cup finely chopped green onions (about 1 bunch) 1/2 cup cold pressed extra virgin olive oil 1/4 cup fresh lemon juice 1 tsp Celtic sea salt (or more to taste) Directions 1. Pulse chopped cauliflower in food processor until it is the consistancy of couscous 2. Combine chopped parsley, mint, green onions, tomatoes, and cucumber with cauliflower 3. Add olive oil, lemon juice, and sea salt 4. Combine very well 5. Adjust salt to taste 6. Cover and refridgerate until ready to serve. Enjoy!
