Mint Chip Paleo Ice Cream

Homemade carob/chocolate chips

1/3 cup coconut oil (melted)
1 tbsp carob or cocoa powder
1 heaping tbsp of local raw honey (or more to taste)

1. Combine above well
2. Pour into cookie sheet (the kind with edges) or a lasagna type pan, coating the bottom very thinly
3. Freeze for 1/2 hour or more
4. Break into small pieces

Ice Cream
13 oz. full fat coconut milk (or canned unsweetened coconut cream)
2 tbsp local raw honey
1/2-1 tsp peppermint extract (to taste)
4 egg yolks (optional. You can very gently warm these over a double boiler being careful not to curdle the eggs. If you are comfortable with your egg source you can use them raw, or buy them pasteurized.)

1. Whisk all ingredients together 
2. Process in an ice cream maker

3. At the end of processing, mix with homemade carob/chocolate chips above  
4. Transfer to a covered container and chill

5. Enjoy!
